- This one is so easy, and my favourite (and I don't even like dates very

- Date and Yoghurt Pie.

- Crust

- 3/4 Cup Oats
- 1/4 Cup Flour
- 1/2 Cup Coconut
- 1/4 Cup Raw Sugar
- 100g Melted Butter

- Mix ingredients together. Press into 9' pie dish. Bake for 12-15
- minutes at 350 degrees F (180 degrees C) until brown.

- Filing

- 350g Cream Cheese
- 1 Teaspoon Vanilla
- 2 Tablespoon Melted Honey (or 2 Tablespoon Sugar)
- 2 Cup Plain Unsweetened Yoghurt
- 3/4 Cup Dates (stoned and chopped)
- 1 Cup Water
- 1 Tablespoon Gelatine

- Simmer dates in 1/2 cup of water until absorbed (about 15 minutes) and
- allow to cool. Mix cream cheese, vanilla, honey and yoghurt. Dissolve
- gelatine in 1/2 cup of boiling water. Mix gelatine into cream cheese
- mix. Mix in dates. Test and add more sugar if too sour. Pour into
- crust put in refrigerator and allow to set (about 1-2 hours)
